Salaamu Alaikum

I am married with an Algerian brother and Alhamdullilah I have learned many dishes. I am needing help with the difficult Ramadan favorite.......Kalba Louz (Spelling?)

I have been told that many try to make this sweet but only a few can make it properly........we buy ours everytime to eat after iftar and it is Macha`Allah.

Also I need a recipe for another sweet that is shaped like a diamond and has mashed dates in the middle. I do not know the name......my mother-in-law brings them for me when she visits and I love them! They are made with semolina and it is like a sandwich.......a thick layer of semolina, a layer of the smashed dates and then another layer of semolina and I think you bake this......??

Also (sorry but I love to try to cook my husband`s food for him) I would like any recipes for Djawez. I know many but I am tired of the same thing.
I know for green beans/potatoes/carrots
peas/potatoes/carrots
peas/khurshouf


I have visited many sites on the web but some are only in French or only have one or two recipes. I think someone needs to make a book in English or even just translate one from French/Arabic! There are MANY sisters who are married with Algerians and we all need to learn the food.

Assalaamu alaikum Umm Aiman :D

The recipe that I use for the Qalb Luz is as follows:

500 grams semolina
250 grams sugar
1 cup margarine or butter
1 cup Orange flower water (a little more if necessary)

Combine all the ingredients to make a sticky paste. Bake at gas 4 until golden. Cut into diamonds and pour syrup over. (for the syrup bring to boil and simmer: 12 ounces sugar, 1 1/2 pints water, 2 tbsp Orange flower water. At the end add in 1 tbsp honey.)

As for the date and semolina sandwiches, do you mean mathaqaba possibly? Mathaqaba is a big favourite with my husband and his family. It is quite simple really, just a mixture of semolina, butter and orange flower water and then as you say a layer of date in the middle. These are cooked on the hotplate rather than baked in the oven.

I use:

2 cups course semolina
1/2 cup melted marg or butter
about 1/2 cup of Orange flower water
pinch of salt

work the marg into the semolina and salt and then add the water so you get a workable dough (not too crumbly but not too sticky). Divide mixture in half and roll out into a square half a cm thick. Cover the surface with a thin layer of mashed date. Cover this layer with the remaining half of the semolina mixture. Cut into diamonds. Place onto hotplate and cook on a low to medium heat keeping a sharp eye on them, turning regularly so they don't burn.

Salaam wa rahmatullah,

Barakallahfiki for posting the recipe for kalba Louz! I love it and will inshallah try to make it...but I wonder how it will turn out!
