Hiding cookies from a guy..LOL
I have never heard of Algerian cookies..fair enough we make chocolate chip cookies but these are not typically Algerian or traditional. Even the word cookie is originally Dutch so...
I don't think you are referring to these ones [Above]..
The thing is it's difficult to know which recipe you want as we have lots of sweets that look like cookies in shape lol.
What I think it might be is macaroons (Fr: macarons) as these are very yammy

-or Algerian almond cookies-
They are made primarily from almonds and you can vary the flavour according to taste, such as chocolate macaroons for example, although plain macaroons are most popular.

Ingredients:
4 egg whites
375 g fine granulated sugar
750 g almond powder
Pinch of salt
optional: orange peel, cocoa powder, vanilla extract, etc.
Preparation:
1- Place a buttered greaseproof paper sheet on a baking tray.
2- In a bowl, beat the egg whites in very firm snow (add a pinch of salt before whisking);
mix it with the almond powder and sugar.
At this stage you can add optional ingredients if desired.
3- Deposit the mixture on the greesproof paper, it is necessary to leave a little
distance between the pieces.
4- Oven cook at 200°C(400°F) approximately 12 minutes in the center of the oven -
too low, the lower part of macaroon is likely to slightly burn or harden too much.
Regularly check their cooking because, according to your oven, the macaroons may
overcook whereas they must remain an ivory white colour, like a meringue.
5- Use a spatula to remove the macaroons from the cooking tray - if they are left on the
tray the heat will continue the cooking process.
Good Luck
