Ingredients :

3 lb Firm fish fillets

4 x Potatoes roasted and Sliced

2 x Green peppers sliced and Sauteed

2 x Tomatoes sliced

Salt and fresh ground black Pepper (to taste)

1 x Lemon


Chermoula Sauce:

1/2 cup Chopped cilantro

1/2 cup Chopped parsley

5 x Cloves garlic finely Chopped

5 tbl Lemon juice

1 1/2 tsp Salt

1 tsp Paprika

1 tsp ginger

1/3 tsp Ground cumin

Cayenne pepper ( to taste )

1/2 cup Olive oil, or more

Instructions :

1. Preheat oven to 425° F. Prepare Chermoula Sauce. In a 9 by 13-inch baking pan, lay roasted potatoes slices, sauteed green peppers, and sliced tomatoes. Arrange fish fillets on top of the vegetables. Season with salt and pepper and top with Chermoula Sauce. Add a squeeze of lemon.

2. Bake until fish is done (15 to 30 minutes or more, depending on size of fish).

Chermoula Sauce: Combine cilantro, parsley, garlic, lemon juice, salt, paprika, cumin, ginger and cayenne. Add enough olive oil to make a thick sauce.

Assalamu alayklum Houda- Hope your well, and enjoying your day so far.

I hope you've tried out all these recipes before you have posted them here! LOL-i'm feeling hungry, just be reading the names! LOL

I think out of all of them, I'll try this one, and let you know the result.

Bien sur, I’ve tried these recipes, I may only be half Moroccan ~ but it’s just as well it’s my mama that’s an excellent Moroccan cook ~ hee hee.

BTW, these are my favourite recipes ~ let me know the result insha Allah.
