i'm a good cook i think you deserve to be helped ,and you know what you should
be proud because it's rara to meet someone who is not algerian and try to learn
algerian cooking.
food is very important.. a lot of antropologist and historian use the culinary
techniques to determine nation civilisation
north africa has an old civilisation 9 thousand years ...the tassili .. the
open air museum in the desert of algiers , the walls ,rocks shows a great sing
of human civilisation ,because also of the invasion of different nation such as
romain ,vandals ,bizantins,arabs,turks ,french contributes to the diversity in
different areas one of them is culinary art that what makes algerian gastronomie
unique our ancestors were very smart and especially women she succeded to
combinate a lotof things in her kichen and i think algerian food is one of the
best in world comparativelly to others it has been proven that's mediteranian
food is really healthy ..sorry for the lecture but i just want to tell you what
you eat determine who you are in another word "tell what you eat i tell
who you are "
any way wich kind of dishes you want start whith ,soups , home bread ,salads,
meat ,couscous, pasta ,spicy .... waiting you response
I am Algerian and have a receip for you, it's called "Messfouf" couscous, and I guess that it's not difficult to finds couscous in the US (go to any farmer's market or healthfood store and you can fin a large variety).
Ingredients:
2 pounds of couscous
1 tablespoon of vegetable oil
1 cup of cold water
1 pound green beans, (you'll probably get them frozen at WalMart, it's OK)
2 pounds fresh young fava beans in pods, cut into half inches pieces
2 teaspoons ssalt, or to taste
3 tablesponns of butter melted
+ (buttermilk to drink, we call it Lebben but I don't think it's available in the US)

1. Prepare the couscous. Rinse it well with cold water, drain and spread it out on a large tray for 30 mn. Sprkinle on the oil and toss well to mix. Puit the couscous filled with 3 or 4 cups boiling water. Steam for 20 minutes without stirring.
2. Turn the coucous out onto the tray again and add the cold water. Toss well to mix and let it dry again, absorbing the water for 15 mn
3. During this time, put the veggies in the top of the steamer, sprinkle with the salt and steam over moderate heat. return the couscous to the steamer witth the veggies and steam for 15 mn more. This will soften the couscousand make it fluffy! Turn the couscous and veggies out into the tray, and add the butter and toss everything together, which willseparate in individual grains.
4. Normally we serve Lebben (buttermilk) in a bowl but in the US it's not possible to get it, so put a platter of watermelon of the season, your husband will love it.

I am an american married to an algerian. I am looking for something my husband calls harrira. It is not the same as the harrira I find in the moraccan cook books though. I have made that version and he likes it, but the one I am looking for is like a puree shorba. It has some veggies and it is orange and it has ras al hanout and it has bulgar put in it at the end after the veggies are pureed. I need a recipie though cause I don't know what kind of veggies or spices to put in it. If anyone can help I would appreciate it and if you have any other recipies from algeria that would be great. I am in need of salads, all I can find is moraccan. He says it is close but there are some differences. Inshallah
